Score the salmon skin by using a very sharp knife to make four 1-in [2.5-cm] lengthwise incisions. Do not cut past the skin. Season the fillets with salt and pepper. Allow them to come to room temperature by sitting unrefrigerated for at least 15 minutes.

Warm the olive oil in a 10-in [25-cm] nonstick skillet over medium-high heat. Place the salmon skin-side down in the hot skillet. Cook until the skin is crispy and golden brown, about 2 minutes.

Reduce the heat to low and flip the salmon over. Add the butter, garlic, and honey to the skillet, and stir with a spoon or spatula to combine. After 1 minute, flip the salmon back over to cook skin-side down. Baste with the honey butter.

Baste with the honey butter every 30 seconds or so. Cook until the salmon flakes easily when prodded with a fork, 6 to 7 minutes. Squeeze the lemon juice over the top and serve immediately.
